Must Have Mushroom Recipes!

Is it just me or are mushrooms underappreciated? They are extremely versatile, are cultivated year-round in Pennsylvania, and they can boost your immune system. So, do yourself a favor, try out some of these tasty mushroom recipes and give our favorite fungus some love!

  • Simply Sautéed – Wash and slice up your favorite variety of mushroom, sauté them in a little bit of butter (maybe add a little bit of garlic) until they are deep brown in color.


  • Portabella Pizzas – Meet your new favorite pizza bite! Wash, scrape the gills/stems out and dry the portabellas. Preheat your oven to a high broil. Brush the bottoms of the portabellas with olive oil and garlic, set them on a lined baking sheet oiled side down. Fill each portabella with your favorite sauce, cheese and toppings, be creative! Place them in the oven until the cheese is melted and golden (about 8-10 mins!).


  • Cream Cheese Stuffed – Wash and cut stems out of mushrooms. Combine cream cheese (liven it up by using your favorite flavored cream cheese!) and grated parmesan. Fill mushrooms with the cheese mixture. Bake at 450 degrees for about 15 mins, caps down!

  1. Sunday night mushroom sandwiches (Serves 4)

    1 lb sliced mushrooms 1 small onion, minced 2T butter 1/2 t salt
    1/4 t crumbled tarragon 1/8 t white pepper 1/8 t ground nutmeg
    1/4 C dry white wine 2 t lemon juice 2T chopped parsley 1/2 C sour cream
    1/4 lb shredded Swiss cheese, (1C) 4 slices toasted sour rye bread or English muffins

    Saute mushrooms & onion in butter in large skillet until onions are soft and beginning to brown, stir in salt, tarragon, pepper, nutmeg, wine and lemon juice. Bring to a boil, lower heat, simmer, stirring frequently, until liquid is nearly gone. Remove from heat, stir in parsley and sour cream. Spoon mixture onto bread slices on cookie sheet. Top each with 1/4C of cheese, broil until cheese melts, serve at once.
